Japanese sharpening stone King Deluxe KG-65 with grit 220/1000

Stones are the best way to grind, sharpen and polish the cutting edge. This method is also used by Japanese knife factories.

The King Deluxe KG-65 220/1000 sharpening stone is a flat, rectangular stone with dimensions 185x63x25mm and gradation (number of grains, abrasive particles per cm2) 220on the one hand and1000on the other. This universal set is ideal for repairing and sharpening severely neglected or damaged cutting edges (grit 220), as well as for regularly restoring working sharpness (grit 1000). The stone was placed on a plastic base equipped with rubber, non-slip feet. The pure material used to produce these stones is aluminum trioxide Al2O3 (corundum).

Knife sharpening:
  1. Gradation selection

    • #220 - #600 when the knife is very blunt or has a damaged or chipped cutting edge
    • #800 - #1200 for regularly sharpened, slightly dull knives
    • #1500 - #6000 for final smoothing and polishing


  2. Sharpening

    1. The stone should be soaked in water a few minutes before use. When sharpening, the stone should be wet all the time.



    2. Place the stone steadily on the countertop. You can place a damp cloth or paper towel under the stone to prevent it from moving. The knife should be placed at an angle of 15-20 degrees to the stone.



    3. Depending on the type of blade:

    - knife sharpened on one side - sharpen 90% on one side and 10% on the other side
    -  knife sharpened on both sides - should be sharpened equally on both sides



    4. After sharpening, remove any burrs from the cutting edge. To do this, set the knife perpendicular to the stone and, maintaining this angle, gently move it along the entire cutting edge, once on one side and then on the other side of the blade.



  3. Maintenance

    The stone should be thoroughly washed and dried after use. Over time, depressions may appear on the surface, which should be leveled, e.g. using a special leveling stone.
