Basic Prep
Our wild sugar kelp is a raw whole food that can be enjoyed right from the bag or added to recipes. It comes straight from the ocean without any rinsing or processing and is solar dried at mild temperatures to retain nutrients and enzymes. Please check for occasional tiny pebbles or shells hidden in the fronds. The fronds may develop a fine white powder during storage. Nothing to worry about ... it's just natural salts and sugars that can either be rinsed off or left on for flavor. Mature fronds may also have occasional spots. Store your Kelp in this bag or any sealed container away from extreme light, heat or moisture.
Raw sugar kelp is chewy but tenderizes when soaked or marinated. Kelp absorbs about 5X its weight in liquid and expands by up to 40%. To fully tenderize, simmer 15-20 min., pressure cook 5 min., roast 3-4 min. at 300º, or pan fry 4-5 min. until crisp.
