Masahiro NEO Santoku kitchen knife 165 mm [10511]

The Masahiro NEO Santoku knife with a blade length of 165 mm has a shape characteristic of Japanese cuisine knives. It is often referred to as the equivalent of the Western chef's knife. Loosely translated from Japanese, the name of this very popular knife means "three virtues" or "three virtues". This refers to the fact that this knife, whose characteristic appearance resembles a combination of a chef's knife and a cleaver, is very suitable for cutting meat, fish and vegetables.

The Masahiro NEO line is a combination of the best quality Japanese steel with a traditional European handle. This is a real treat for everyone who expects perfect sharpness, a Japanese blade design and a traditional European handle. Forging masters from Masahiro used one of the best steels in this series, i.e. powder steel *Super Gold 2.

The Masahiro NEO knife blades are forged from 3 layers of steel, where the core is SG2 steel and the outer layer is soft SUS410L steel. Thanks to this execution, a characteristic line called Katana-Edge is created on the blade. This decoration comes from traditional Japanese sword making. Over time, the blade line may become a little darker, which will further highlight the Far Eastern character of the knife.

The handle of the knives is made of laminated wood with beautiful black grain. It is wood impregnated with resin, which perfectly protects against moisture. The knife handle is attached to the tang with three rivets. The perfectly profiled shape of the handle is ergonomic and fits comfortably in the hand.

The knives are sharpened asymmetrically 80/20. This means that the cutting edge is moved to one side in the knife axis. The benefits of using asymmetric sharpening include a cutting edge that is up to 35% thinner than a symmetrical blade, making it much sharper.

* SG2 (Super Gold #2) powder steel with high chromium content (up to 16%) has excellent corrosion resistance. It is created as a result of a complex process in which superfine steel nanoparticles are merged together, heated and formed into the desired shape. This is a production method completely different from "traditional" smelting and allows you to obtain steel with much better performance parameters. The high carbon content (up to 1.45%) allows the knife to be hardened to a high hardness, providing above-average resistance to dulling.
