Gyutoh - the flagship among Japanese knives, the flagship 5000MCD 67 series from Miyabi is an ideal chef's tool and a small masterpiece of Far Eastern applied art. It has an MC66 MicroCarbide powder steel core that provides extreme hardness and edge sharpness. The core is forged with 132 layers of steel of higher flexibility and different colors, which create a unique layered pattern on the blade. The complex freeze-hardening process guarantees a core hardness of 66 HRC. The cut is made in the Honbazuke technique, it is symmetrical, made by hand in many stages, on natural stones and polished with leather. The handle is made of the highest quality D-section black ash wood, allowing for better control and tireless work. A layered blade embedded in this wood, finished with a beautiful head with a logo and mosaic pins emphasize the exclusivity of this line. To keep your knife in top shape, you need to be careful. Only hand washing and sharpening on stones offered by the manufacturer are recommended. Avoid using glass, ceramic and stone cutting boards.
